Turkey Sweet Potato No Bean Chili

A healthy twist on your favorite cold weather meal

Having a big bowl of chili ready at dinner with very minimal effort (and dishes) is what winter is all about. This turkey chili is both comforting and healthy, so grab your slow cooker and cozy on up… your favorite fall meal is on it’s way.

Q: Do I have to cook the turkey on the stove first?

A: Technically, you don't have to, but I highly recommend it. It will give your chili more flavor and is safer than adding it raw to your slow cooker. Be sure not to over cook it on the stove top though.


Q: Can I make a thicker chili in a slow cooker?

A: You can! If the chili isn't as thick as you would like, take the lid off and leave it on high for the last 30 minutes to an hour. It will thicken up a bit more. You can also add more turkey for a meatier bulk.


Q: Can I sub for different meats?

A: Always! Turkey is a great lean protein but substituting for beef in your chili works just as well. You can also sub the turkey for sausage, chicken, or a combination!


Ingredients

2 medium sweet potatoes, chopped

½ T olive oil

1 green bell pepper, chopped

½ T olive oil

2 lbs of ground turkey, browned

28 oz canned diced tomatoes (don’t drain)

1 ½ c low-sodium chicken broth

2 T tomato paste

½ red onion, diced

1 T garlic, minced

2 T chili powder

1 t ground cumin

1 t dried oregano

Pinch of salt

Pinch of Pepper


Optional Ingredients

Corn (optional)

Beans (optional)

Jalapenos (optional)

Sprinkle of cheese (optional)

Green Chives (optional)

Sour cream (optional)


Stove Top Pan Instructions

  1. Preheat the oven to 425℉. Toss chopped sweet potatoes in olive oil and spread evenly on a foil lined baking sheet. Bake for 20 minutes, stirring every 10 minutes.

  2. While the sweet potatoes are baking, add chopped green bell peppers into a frying pan over medium-high heat, with olive oil. Saute for ~5 minutes, flipping frequently, until they begin to soften.

  3. Brown ground turkey in a frying pan until fully cooked.

  4. In a medium pot, add diced tomatoes, chicken broth, tomato paste, red onion, garlic, chili powder, ground cumin, dried oregano, salt, and pepper. Stir until well combined and heat on the stove top over medium high heat.

  5. Mix in ground turkey, sweet potatoes, and green peppers as they are ready.

  6. Cook over medium-high heat for 30-45 minutes, stirring frequently

  7. Serve in bowls, sprinkle with cheese toppings, and enjoy!


Slow Cooker Instructions - 6-8 hours on Medium/Low

  1. In a medium pan, brown ground turkey until fully cooked.

  2. In the slow cooker, add diced tomatoes, chicken broth, tomato paste, red onion, garlic, chili powder, ground cumin, dried oregano, salt, and pepper. Stir until well combined.

  3. Add sweet potatoes, green peppers, and ground turkey. Stir until well combined.

  4. Cook on medium/low for 6-8 hours, stirring when you can.

  5. Serve in bowls, sprinkle with cheese toppings, and enjoy!
